DUTCH APPLE PANCAKE
 

1 apple (Granny Smith), sliced with skin on
1 tbsp. lemon juice
2 tbsp. sugar
5 tbsp. butter
3 eggs
1/2 c. plus 2 tbsp. flour
1/2 c. plus 2 tbsp. milk
Cinnamon

Slice apple and toss together with lemon juice. Beat eggs, sugar, flour and milk together. Add apples. Melt butter in a glass pie plate and pour in pancake. Bake at 425 degrees for 25 minutes. Sprinkle with cinnamon.
