MARINATED FLOUNDER
 

8 lg. flounder fillets
Fresh dill (8 sprigs)
Scallions (enough to cut into 16, 3 inch pieces)
1 tsp. salt
1 c. orange juice mixed with juice of 1 lime
2 c. prepared Italian or garlic salad dressing
1 red onion, cut into rings

Put the dill and 2 pieces of scallion on each fillet. Fold fillet over and put into large skillet. Salt and pour on the orange and lime juice mixture. Cover and simmer gently for 15 to 20 minutes until flounder is white and cooked.

Remove fish with spatula and put in shallow dish. Cover with salad dressing and onion rings. Chill. When ready to serve, arrange fillets on a serving platter with lime wedges and lettuce.
