SALMON CROQUETTES
 

1 (15 oz.) can salmon (save juice)
1 med. onion
2 eggs
1 1/2 c. floured bread crumbs
Milk to moisten ingredients
Cook oil (for frying)
Bread crumbs (to roll ingredients in)

Clean salmon of skin and bones; save juice. Finely chop onion. In a large bowl combine eggs, salmon, onion, bread crumbs and juice from salmon. If not moist enough, add milk. Take 1 1/2 tablespoons of ingredient, roll into egg shape then in bread crumbs. Heat cooking oil (just enough to cover bottom of frying pan). Cook croquettes in oil until done.
