BLACKENED RED FISH
 

3-4 red snapper fillets
1 cube butter

SEASONING MIXTURE:

1 tbsp. paprika
1/2 tsp. thyme
1/2 tsp. oregano
1 tsp. onion powder (onion salt use a little less)
2 1/2 tsp. salt
1 tsp. cayenne pepper
3/4 tsp. white pepper
3/4 tsp. black pepper

Heat large cast iron skillet on high for 10 minutes empty. Dip red snapper fillets into melted butter. Sprinkle with seasoning mixture on both sides, pat in. Put in skillet for 2 minutes on each side. Drip a tablespoon butter over fish while cooking if desired. Serve on warm plates. (Works best cooking for 4 or less people). May use scallops instead of redfish. May use in broiler pan baking chicken (remove skin).
