1/4 c. butter 1 tsp. dry mustard 1/2 tsp. salt 1 tbsp. lemon juice 1 tbsp. horseradish 1 lb. perch fillets TOPPING: 1 tbsp. butter, melted 1/4 c. bread crumbs 1 tbsp. dried chives or 1 1/4 tsp. fresh chopped chives 1/8 tsp. pepper 1/8 tsp. pepper sauce Oven at 350 degrees. In ungreased 8 inch square baking dish (1 1/2 quart) melt 1/4 cup butter in oven. Add remaining perch ingredients, except perch, stir to blend. Dip both sides of perch onto melted seasoned butter. Place into same baking dish. In a small bowl combine all topping ingredients. Stir to blend. Sprinkle over perch. Bake near center of 350 degree oven for 20 to 25 minutes or until fish flakes with fork. |
