DEMI CHOCOLATE MOUSSE
 

1 lg. egg
1 c. chocolate chips
2 tbsp. sugar
1 tsp. vanilla
Salt
3/4 c. milk
Sweetened whipped cream, optional

Place egg, chocolate chips, sugar, vanilla and a dash of salt into a blender. Whirl on low speed to blend egg mixture. Heat milk just until it simmers. Add to egg mixture in blender. Whirl on low speed for 1 minute. Pour equal portions into 4 demi tasse cups. Chill until firm, at least 3 hours. Serve chilled topped with sweetened whipped cream, if desired. It is absolutely delicious, very rich and smooth. Tastes like a lot more work than it is!
