MARINATED STRAWBERRIES

This dessert is an unlikely combination that is absolutely delicious. We often use the Italian name, "fragole pazze, " since strawberries in balsamic vinegar would not tempt many people. However, the combination of sugar, balsamic vinegar and black pepper is just the foil to bring out the natural sweetness of the berries... trust me! 2 tbsp. sugar 3 tbsp. balsamic vinegar 1/2 tsp. freshly ground black pepper White or dark bittersweet chocolate, grated

Combine the sugar, vinegar and black pepper in a stainless steel bowl. Whisk well to combine. Stir in strawberries and allow to marinate for 5 minutes. Place in serving bowls and garnish with grated white chocolate and a sprig of mint. Serves 4.

Note: Do not substitute any other vinegar for the balsamic. It is available in most markets.
