GOAT CHEESE & GREEN ONION PITHIVIERS
 

4 sheets puff pastry, 10"x10", 8 (5") circles to fill
2 tbsp. butter, unsalted
24 green onions, including tops, cut into fine julienne
1 egg
1 egg yolk
1/2 c. whipping cream
1 tbsp. Dijon mustard
1/2 c. fresh French bread crumbs
4 oz. goat cheese
1/4 tsp. nutmeg
Salt & pepper

Melt butter in heavy skillet, add onions. Cook 30 minutes; cool. Beat egg and egg yolk with whipping cream and mustard. Stir in cooled onions, bread crumbs, goat cheese, nutmeg, salt and pepper. Can be prepared ahead and chilled until time to bake.

Divide into pastries, place on greased baking sheet, top with another circle, crimp edges, brush with egg and water glaze. Slash. Bake at 450 degrees for 15 to 20 minutes, turn off oven for 5 minutes.
