BLUEBERRY CONE CAKES
 

1/2 c. fresh or dry pack frozen blueberries
1/4 c. butter
1 egg
3/4 c. sugar
1/2 tsp. lemon extract

1 c. cake flour
1 tsp. baking powder
1/8 tsp. salt

1/4 c. milk

1 doz. lg. flat bottom cones
1 pkg. white frosting mix

1. Oven at 350 degrees.

2. Rinse and drain blueberries and let dry on paper towel.

3. Cream butter, sugar, egg, lemon extract.

4. Combine cake flour, baking powder, salt. Add to egg and sugar mixture. Mix well.

5. Carefully fold in blueberries. Spoon mixture into cones, set cones into muffin cups or on baking dish. Bake at 350 degrees for 30-35 minutes.

Prepare frosting mix and frost cakes. Decorate with assorted candies, or jelly beans, M & M's, coconut or marshmallows (colored), corn candy.
