PLAIN SCONES
 

An English recipe. 1/2 tsp. salt 2 oz. butter 1 oz. sugar 1 egg, beaten with sufficient milk to make 2/3 c. liquid

Mix flour and salt. Rub in butter. Stir in sugar. Add egg and milk, reserving a little to brush over the tops. Knead lightly on a floured surface and roll out to 1/2 inch in thickness. Cut into 2 1/2 inch rounds. Re-roll the trimmings and cut more rounds. Place on a greased baking tray and brush the tops with egg and milk. Bake in a hot 425 degree oven for about 10 minutes. Ideal with strawberry jam and cream.
