Mix in order and set aside: 8 oz. softened cream cheese 1/4 c. sugar 1 egg 6 oz. chocolate chips Combine: 1 1/2 c. flour 1 tsp. baking soda 1/2 tsp. salt 3/4 c. sugar 1/4 c. cocoa 1 tsp. vanilla Add and mix thoroughly: 1/3 c. oil 1 tbsp. vinegar 1 c. water Fill paper cups 1/2 full. Drop a big teaspoon of filling in center. Bake at 350 degrees for 25 to 30 minutes. DO NOT FROST. Makes 16 per recipe. Cupcakes freeze well; put wax paper between layers of cupcakes. |
