SMOKED SAUSAGE CASSEROLE
 

(Turkey sausage may be used.) 1/4 chopped onion 1/4 c. butter 1/4 c. + 2 tbsp. flour 1/4 tsp. pepper 1/4 tsp. thyme 2 c. milk 1/2 lb. smoked sausage 1 c. frozen peas, rinsed 3 tbsp. bread crumbs 1 tbsp. butter, melted

Pare and slice potatoes. Cook onion and 1/4 cup butter. Blend in flour and seasonings. Gradually add milk, stirring until smooth and thickened. Alternate 1/2 sausage, potatoes, peas and sauce in 2 quart casserole. Repeat layers ending with sauce.

Combine crumbs and 1 tablespoon butter and sprinkle over sauce. Bake at 350 degrees for 20-30 minutes or until crumbs are slightly browned.
