MISSISSIPPI QUEEN PECAN CAKE
 

6 eggs, beaten
1/2 lb. (2 sticks) butter, softened
2 c. sugar
1 c. whiskey
4 c. flour
4 tsp. baking powder
1 pinch salt
1 (8 oz.) box raisins (optional)
2 qts. shelled pecans

Preheat oven to 350 degrees. Cream together eggs, butter, sugar and whiskey. Sift together flour and baking powder and salt. Combine wet and dry ingredients in mixer bowl and mix over low speed several minutes. Add pecans and raisins if desired. Pour into greased tube or Bundt pan. Bake four about 60 minutes, until toothpick inserted near center comes out clean. If desired, keep covered at room temperature and allow to age for a day before serving.
