MISSISSIPPI MUD CAKE
 

2 sticks butter
1/3 c. cocoa
4 eggs
2 c. sugar
1/2 c. nuts
1 1/2 c. flour
1/2 tsp. salt
1 tsp. vanilla
1 c. coconut
1 jar marshmallow creme (7 or 8 oz.)

Melt butter and add cocoa. In another bowl beat eggs, add sugar, flour, salt, vanilla, coconut and nuts. Beat to mix, then add butter and cocoa mixture. Beat again. Pour into a 9 x 13 inch pan and bake at 350 degrees for 30 minutes or until done. Let cool 5 minutes; then spread marshmallow creme on top of cake and let cool. Then frost with the following:

FROSTING:

1 stick butter
1/2 sm. can evaporated milk
1 (1 lb.) box powdered sugar
1 tsp. vanilla

Mix well, beat and spread on top of marshmallow creme. Cut into squares to serve. This is very rich BUT I like it even richer by adding a cup of nuts to the frosting!
