6 med. potatoes 2 tbsp. butter 1 onion, chopped 2 lg. tomatoes, peeled and chopped 1/2 c. heavy cream 1 c. grated Muenster 1/4 c. chopped parsley Salt and pepper to taste Cook potatoes until tender, then drain, peel and chop in 3/4 inch cubes. Keep warm. Saute the onion in butter until tender, then add the peeled and chopped tomatoes, cooking for 5 to 10 minutes while stirring occasionally. Season with salt and pepper, then stir in heavy cream and Muenster cheese and cook until the cheese is partially melted. Put potato cubes in serving dish, pour cheese sauce over and garnish with parsley. |
