SHRIMP OR CRAB AU GRATIN
 

1/2 c. celery
1 c. sliced onion
1/4 tsp. dried pepper
1/2 c. flour
2 egg yolks
1 tsp. salt
1 lb. shrimp or crab meat
14 oz. can evaporated milk
12 oz. grated Cheddar cheese

Saute onions and celery in butter until soft. Add flour to mixture. Gradually add milk, stirring constantly. Add egg yolks and salt and pepper. Cook 10 minutes. Pour shrimp or crab into bowl and pour sauce over shrimp or crab. Place in greased pan and sprinkle with cheese. Bake at 375 degrees until hot.
