1/2 lb. rainbow rotini, cooked and drained 1 sm. jar marinated artichoke hearts 2 1/2 oz. sliced pepperoni 1 c. sliced fresh cauliflowerets (can substitute mushrooms) 1 c. sm. fresh broccoli flowerets 1 c. diced Mozzarella cheese 1/2 c. sliced green onions 1/4 c. olive oil 2 tbsp. red wine vinegar 1/2 tsp. Italian seasoning (can substitute Salad Seasoning by Schilling) Combine all ingredients and cover and chill thoroughly. Toss gently before serving. 6-8 servings. |
