Here is a cool and refreshing salad, popular in Greece where there are many hot days.

DRESSING:

1 c. yogurt or sour cream
1 tsp. vinegar
1 tsp. spearmint flakes
1 tsp. scallions, chopped
1/2 tsp. sugar
Salt and pepper to taste

Mix cucumbers in sauce and serve chilled.
