1/2 head Chinese cabbage (celery cabbage) 1 head Boston lettuce 1 can (1 lb.) artichoke hearts 1 c. fresh or canned grapefruit sections 1/4 c. salad or olive oil 2 tbsp. fresh lemon juice 1/4 tsp. basil leaves Salt & pepper to taste Wash and thoroughly dry greens. Break into bite-size pieces. Place in salad bowl. Top with artichoke hearts and grapefruit sections. Combine remaining ingredients. Add to fruit and greens. Toss lightly. Serves 8. |
