1 head iceberg, red leaf or butter lettuce 1 (7 oz.) can water-packed tuna 1/2 lb. green beans, cooked 1 sm. onion, or 1/2 red onion, sliced 1 tomato, sliced 1/2 green pepper, seeded and cut in strips 1/2 red pepper, seeded and cut in strips 2 hard-boiled egg whites, sliced 2 sm. potatoes, boiled, skinned, and sliced Low calorie oil free Italian dressing Parmesan cheese Wash lettuce and dry in a lettuce dryer or with paper towels. Tear each lettuce leaf in half; line a salad bowl with the leaves. Drain tuna, flake with a fork, and place around the bowl on the lettuce. Then add each of the ingredients in turn. Mix the whole salad with just enough dressing to coat but not soak the ingredients. Serves 2 to 4. |
