BEAN AND PUMPKIN SOUP
 

6 oz. dried blackeye peas
1 oz. diced onion
2 oz. diced pumpkin
1/2 c. diced celery
1 1/2 c. chicken bouillon

Combine all ingredients in saucepan. Simmer 40 minutes or until vegetables are tender and soup is thick. Makes 1 serving.
