SMOKED SAUSAGE SALAD NICOISE
 

1/2 lb. Hillshire Farm lite turkey, or regular smoked sausage, cut into julienne strips
8 sm. red potatoes, cooked in jackets and quartered
1/2 c. fresh green beans, cooked crisp-tender
1 lg. tomato, cut into wedges
20 ripe pitted olives
Purple onion slices for garnish
Mustard Vinaigrette

Place smoked sausage in skillet and saute for 1 minute. Allow smoked sausage, potatoes, green beans and tomato wedges to come to room temperature before arranging decoratively on individual serving plates or large platter. Garnish with olives and purple onion slices. Serve with 1 1/2 tablespoons Mustard Vinaigrette per serving.

MUSTARD VINAIGRETTE:

1/4 c. red wine vinegar
3 tbsp. olive oil
1/4 c. water
2 tbsp. Dijon mustard
2 tbsp. chopped parsley
1 tsp. sugar
1/2 tsp. freshly ground pepper
1 sm. garlic clove, minced

Combine all ingredients. Prepare at least 30 minutes prior to serving to allow flavors to blend. Makes 4 servings.

Total preparation and cooking time: 45 minutes; including Mustard Vinaigrette.
