MEDITERRANEAN RICE PILAF
 

3 c. chicken broth
1 1/2 c. uncooked long grain white rice
4 tbsp. vegetable oil
1/2 c. seedless golden raisins
1/2 tsp. turmeric
1/2 tsp. curry powder
1 1/2 tbsp. soy sauce

In a 1-quart saucepan, bring chicken broth to a boil. In a medium saucepan, mix rice, oil, raisins, turmeric, curry, and soy sauce. Pour in chicken broth. Cover and cook over low heat 20 minutes or until liquid is absorbed and rice is tender. 8 servings.
