6 cups steamed rice (do not over cook). Drain and cool. 4 chicken breasts, diced. Stir fry in minimal amount of oil (I use olive oil, just enough on bottom of pan so chicken doesn't stick), cook on low to medium heat. 2 carrots, cut in small lengthwise pieces 2 cups broccoli pieces, stir fried together until just tender. 1/2 cup mayonnaise, 1/2 cup Ranch dressing and 3/4 teaspoon curry powder
Mix together 1/2 cup mayonnaise (I prefer Best Foods), Ranch dressing and curry powder. Mix all ingredients together. Serve cold on a bed lettuce or heat as a main dish.
