3 c. brown rice 1 1/2 c. red kidney beans, cooked 4 green onions, chopped 1/2 green pepper, diced 2 stalks celery, diced 1/4 c. fresh parsley, chopped 1/4 c. mayonnaise 1/4 c. plain low-fat yogurt 2 tsp. curry powder Dash of freshly ground pepper Combine first 7 ingredient. Toss to mix. In separate bowl, combine mayonnaise, yogurt, curry powder, and black pepper. Blend thoroughly with rice/bean mixture. Serves 6. |
