CHICKEN & RICE
 

1 whole chicken, cut up into pieces (8 to 10)
3 cloves of garlic, crushed
Salt & pepper to taste
1 pkg. Sazon Goya seasoning with coriander & annatto
1 pkg. Goya chicken broth or cube of chicken broth
3 c. rice (uncooked long grain white)
1 pkg. frozen peas

Crush garlic and mix with salt and pepper and Sazon seasoning. Coat each piece of chicken with seasoning. In stew pot, place chicken and any seasoning mix leftover and brown chicken. Once chicken is brown, cover pot and lower heat to a simmer to cook chicken. While chicken is cooking, make 2 cups of chicken broth and bring to a boil. Take chicken out of stew pot and put 3 cups of uncooked long grain white rice.

Cover rice about 1/4 inch above with chicken broth. Bring rice to a rapid boil. Once rice boils lower heat to a simmer and cover. After 15 minutes, turn rice and put chicken back in pot and cover for an additional 15 minutes. At this time, if you would like to add pea, do so and mix with rice.
