3 tbsp. vegetable oil 2 lg. ribs celery diagonally sliced 3 c. cold cooked rice 4 med. green onions with tops, sliced 1 c. cooked ham strips 2 tbsp. soy sauce 2 eggs, beaten In a large skillet or wok heat oil. Stir fry celery over medium high heat about 2 minutes. Add rice and stir to separate and coat with oil. Stir in onions, ham, and soy sauce. Stir fry just until heated through, about 1 minute. Add eggs; stir fry until set. Serve with additional soy sauce, if desired. Serves 4. |
