4 lg. bananas 2 c. sugar 2 lg. eggs 3 c. flour 1 c. chopped nuts 2 tsp. baking soda 2 tsp. baking powder 1 tsp. salt 2/3 c. oil Mash bananas in large mixing bowl. Beat in eggs and sugar. Sift dry ingredients together in bowl. Add to banana mixture alternately with oil but do not overbeat (use spoon not mixer). Fold in nuts quickly. Fill 2 1/2 inch greased muffin pans 2/3 full. Bake at 375 degrees for 25 to 30 minutes or until done. Serve warm with butter. Makes 1 1/2 dozen. |
