SIX WEEK BRAN MUFFINS
 

2 c. All Bran cereal
1 c. melted shortening or oil
2 c. All Bran cereal
2 c. 40% bran
2 c. sugar
4 eggs, beaten
1 qt. buttermilk
5 c. flour
5 tsp. soda
1 tsp. salt
Raisins, nuts

Pour boiling water over All Bran and let stand a few minutes. Add melted shortening or oil and mix. Mix bran cereal and 40% bran together. Stir together sugar, eggs, buttermilk, flour, soda, and salt together. Combine all ingredients. Bake in greased muffin tins. cover and store unused batter in refrigerator to use as needed (up to six weeks). Add raisins and nuts if desired. Bake at 400 degrees for about 20 minutes.
