CHICKEN BAKED IN MUSTARD
 

2 whole skinless, boneless chicken breasts (about 1 to 1 1/2 lbs. total)
1/4 c. good quality prepared mustard
1/2 to 1 c. bread crumbs (preferably soft, whole wheat & homemade)

Cut chicken in 4 equal pieces and pat dry with a paper towel. Brush the mustard onto both sides of chicken; and roll each piece in the bread crumbs, coating thoroughly and gently shaking off the excess. (I used almost a cup.) Place in baking dish or cast-iron frying pan sprayed with "Pam". Bake in preheated 400 degree oven for 20 minutes or until done. Serves 4.

NOTE: I use Dijon mustard. Try others to suit your taste. Chicken is very moist.
