6 whole vanilla beans, cut lengthwise into about 4 pieces 8 oz. brandy Combine in a jar, shake and let age for about 6 months for best flavor. As it ages, it darkens. If desired, once aged, the mixture may be strained and stored and the vanilla beans reused. Or leave the beans in the mixture, adding additional brandy as the vanilla is used. Use full strength in any recipe calling for vanilla extract. This is for persnickety cooks with a lot of time on their hands. |
