CHINESE PEPPER STEAK
 

2 tbsp. shortening
2 lb. beef chuck or round steak
2 tbsp. minced onions
1/2 c. celery, cut Chinese style
2 lg. green pepper strips
2 tbsp. chopped pimento
1/2 c. beef stock
Salt & pepper
2 tbsp. cornstarch
2 tbsp. water
1 tsp. soy sauce

Melt shortening, add beef and brown. Pour off any fat, add onions, celery, green pepper and pimento. Add beef stock, salt and pepper, cover tightly. Cook slowly 20 minutes. Thicken with cornstarch and little water. Serve over rice.

NOTE: Can add bamboo shoots, water chestnuts and mushrooms.
