EASY APPLE DUMPLINGS
 

4 baking apples, pared and cored
1/2 c. sugar
1/2 tsp. cinnamon
1/2 c. all-purpose flour
1/8 tsp. salt
1/4 tsp. baking powder
1 egg, slightly beaten
4 tbsp. melted butter
1 tsp. vanilla

Tips: Can be made the day before and served with a hot vanilla sauce. Or it can be reheated in microwave on high 1 1/2 minutes per apple.

Prepare apples. But 4 custard cups for apples.

Mix 1/4 cup of the sugar with cinnamon. Roll apples in cinnamon sugar. Place into custard cups. Sprinkle remaining sugar mixture over apples. Stir together 1/4 cup remaining sugar with flour, baking powder and salt. Mix egg, butter and vanilla. Blend together.

Spoon batter over apples, divide evenly. Bake at 375 degrees until crust is golden, 35 to 40 minutes. Serve with whipped cream or ice cream.
