PIZZA DOUGH
 

3 c. ice cold water
1/8 tsp. ascorbic acid (vitamin c) optional
7-8 c. flour
2 pkg. quick rise yeast
1 tbsp. salt
Olive oil

In an electric mixer with bread hook. Place the water, ascorbic acid, flour, and yeast. Mix for 5 minutes on low speed, then 6 minutes on high speed. Add salt and mix for 4 minutes on high speed. Cover dough and let rest for 10-15 minutes.

On a lightly floured surface, cut dough into 4-5 pieces. Put olive oil in pizza pan or cookie sheets (just enough to grease pans). Place one piece of dough and punch down. Cover and let rest 10 minutes. Continue to spread out until fills pan. Prebake for 5-10 minutes on 400 Degrees. These are great to freeze and fill when you need them. Bake at 400 degrees. If they are prebaked approximately 10 minutes or until crust is brown and cheese is melted and bubbly. If not prebaked, 15-20 minutes. This also makes great bread or rolls.
