   Irish Moss
Irish Moss is a small greenish-brown sea plant which, due to its fine leaves, has an appearance similar to parsley. It grows naturally on all northern Atlantic coasts and is also known locally by many other names. It is sometimes called jelly moss because cooks have used it for many centuries to make gelled foods such as custards and puddings, which are now usually congealed by the use of eggs or gelatin. It is also known as carrageen.

Irish moss can be used to add a spicy flavor similar to bay leaf to soups and casseroles, while also acting as a thickening agent.
